Ingredients
For the waffle:
- 415 g self-rising flour
- 12 g baking powder
- 3 g salt
- 2 large eggs
- 415 ml milk
- 120 ml oil or melted coconut oil
- Salt and pepper
For the topping:
- 125 g creme fraîche
- 250 g smoked salmon
- 15 g chopped chives
- 15 g chopped dill
- freshly ground pepper
Method
- Combine all dry ingredients in a large bowl.
- Separate the egg yolks from the whites. Using a mixer, beat the egg whites until stiff.
- Mix the egg yolks with the milk and oil.
- Now add the dry ingredients to the wet ingredients and combine. Gently spoon in the egg whites.
- Fry the waffles in the Wafflelicious for 3 to 4 minutes until golden brown.
- Spoon some crème fraîche onto a waffle, top it with a slice of smoked salmon and garnish with chopped chives and dill, ground pepper and a slice of lemon.
