Ingredients
For the waffles:
- 2 cans of chickpeas, drained
- 0.5 onion
- 1 garlic clove
- 0.5 red chili pepper
- 1 handful of flat-leaf parsley, finely chopped
- 1 egg
- 1 tsp ras-el-hanout
- 1 generous dash of olive oil
For the topping:
- 1 red Romano pepper, chopped
- 0.5 onion, minced
- 1 can of diced tomato
- 1 garlic clove, chopped
- 1 courgette
- juice of 0.5 lemon
- pepper
- salt
- olive oil
Preparation
- Gently fry the onion, garlic, Romano pepper and diced tomato with a dash of olive oil. Dilute with a splash of water and season with salt and pepper. Allow to simmer.
- Put all ingredients for the waffle burgers in the blender. Blend into a smooth dough.
- Use a potato peeler to slice the courgette into thin ribbons. Season with salt, pepper and lemon juice. Allow to marinate for a while.
- Heat the waffle iron and grease it with a thin layer of olive oil. Add two generous spoons of chickpea batter and bake some beautiful golden-brown waffles.
- Serve: Plate a waffle. Top with some courgette ribbons. Finish with our tomato sauce and a parsley sprig.
