Recipe Breakfast wurger

6 wurgers

Cooking time: approx. 30 minutes


Ingredients:

  • 80 g self-rising flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1.5 tsp salt
  • 8 large eggs
  • 392 g buttermilk
  • 1 tbsp oil
  • 3 tbsp unsalted butter
  • 12 bacon slices
  • 450 g baby spinach
  • Maple syrup to serve

Method:

For the waffles: 

  1. Heat the oven to 95°C. 
  2. Whisk together the flour, baking powder, baking soda and salt in a bowl. 
  3. In another bowl, mix 2 egg whites until they reach a snowy consistency. 
  4. In a large bowl, whisk together 2 egg yolks, buttermilk, oil and butter. Add the flour mixture to this and stir until it forms a homogenous mixture. Carefully fold in the egg whites. 
  5. Fry the waffles golden brown in the Wafflelicious for 3 to 4 minutes.
  6. Place the waffles in the oven to keep them warm. 

For the filling: 

  1. Fry the remaining 6 eggs sunny-side up. 
  2. Fry the bacon at the same time. 

To serve, cut a waffle in half lengthwise and make it into a ‘wurger’ with the fried eggs, spinach and bacon. Drizzle a little maple syrup on top as desired.
