Ingredients:
- 80 g self-rising flour
- 1.5 tsp baking powder
- 1 tsp baking soda
- 1.5 tsp salt
- 8 large eggs
- 392 g buttermilk
- 1 tbsp oil
- 3 tbsp unsalted butter
- 12 bacon slices
- 450 g baby spinach
- Maple syrup to serve
Method:
For the waffles:
- Heat the oven to 95°C.
- Whisk together the flour, baking powder, baking soda and salt in a bowl.
- In another bowl, mix 2 egg whites until they reach a snowy consistency.
- In a large bowl, whisk together 2 egg yolks, buttermilk, oil and butter. Add the flour mixture to this and stir until it forms a homogenous mixture. Carefully fold in the egg whites.
- Fry the waffles golden brown in the Wafflelicious for 3 to 4 minutes.
- Place the waffles in the oven to keep them warm.
For the filling:
- Fry the remaining 6 eggs sunny-side up.
- Fry the bacon at the same time.
To serve, cut a waffle in half lengthwise and make it into a ‘wurger’ with the fried eggs, spinach and bacon. Drizzle a little maple syrup on top as desired.
