Ingredients
- 350 g sugar
- 400 ml water
- 1 kg passion fruits
- Juice of 1 lemon
Preparation
- Place the sugar and water in a saucepan and bring the mixture to the boil.
- Cook for 2 to 3 minutes until the sugar has completely dissolved.
- Remove the pan from the heat and allow the syrup to cool.
- Cut the passion fruit in half and scoop out the pulp.
- Push the flesh through a fine sieve to remove the seeds. You will have about 250 ml passion fruit juice.
- Pour this juice and the lemon juice into the sugar syrup then stir.
- Pour the mixture into the ice cream maker.
