- Program: Extra smooth
Ingredients
- 400 g lettuce
- 2 shallots
- 2 tbsp olive oil
- 1,5 l vegetable stock
Garnish:
- 100 g cooked quinoa
- juice of 1/2 lemon
- 100 g smoked salmon
- 2 tbsp coarsely chopped chives
- salt and pepper
Preparation
- Peel and finely chop the shallots. Wash the lettuce and place all the ingredients in the soup maker.
- Select the ‘Extra smooth’ programme.
- Finish the soup with the cooked quinoa, some lemon juice, salt and pepper.
- Add equal amounts of the chopped smoked salmon to the soup bowls and pour over the soup. Garnish with chives.
