- Program: Smooth
Ingredients
- 2 beetroot
- 2 carrots
- 1 parsnip
- 1 onion
- 2 garlic cloves
- a splash of olive oil
- 1,5 l vegetable stock
- a few sprigs of lemon thyme
Healthy cream:
- 100 g cashews
- 1 garlic clove
- 0,5 lime juice
- 150 ml water
- 0,25 tsp turmeric
- 0,25 tsp cumin
- a pinch of salt
Preparation
- Peel the beetroot, carrots and parsnip.
- Peel the onion and garlic cloves.
- Cut all vegetables into chunks and place in the soup maker.
- Select the ‘Smooth’ programme.
- Place all the ingredients for the healthy cream in a blender and mix until smooth.
- Spoon the smooth soup into bowls.
- Garnish with a spoonful of the healthy cream and a sprig of lemon thyme.
