Yoghurt waffle with blueberries and vanilla

250 g wholemeal spelt flour
2 tsp baking powder
pinch of salt
150 ml milk
3 eggs
150 g yoghurt
50 g butter (melted) or coconut oil
100 g blueberries
3 drops of vanilla extract

Mix the flour, baking powder, and salt in a bowl. Beat the eggs lightly with a whisk in another bowl and mix in the milk, yoghurt, vanilla, and butter. Pour the wet mixture into the dry ingredients and mix with a whisk until the batter is smooth. Now, gently stir the blueberries through the batter. Grease the waffle iron with coconut oil.
Tip: Delicious with an extra spoon of yoghurt over the waffles and some blueberries on top.
