Sweet potato waffles
Peel the sweet potato and grate it using a coarse grater. Put it in a saucepan and press the garlic clove into the pan. Add the salt and 2 tbsp of water. Cook for about five minutes until the sweet potato has softened slightly. Grind the oatmeal into a fine powder. Remove the sweet potato from the heat and place in a large bowl. Add the eggs. Finally, add the oat flour.
Mix it all to a smooth mass.
Peel and seed the avocados, cut them into slices. Remove the pips from the pomegranate.
Divide the avocado and pomegranate seeds over the waffle, add a dash of quark and finish with maple syrup.
