Curry soup with pumpkin and parsnip

Ingredients

  • 190 g carrots
  • 190 g parsnip
  • 225 g pumpkin
  • 1.5 tsp Thai red curry paste
  • 1.5 tbsp vegetable broth
  • 900 ml water
  • coconut milk to taste

Preparation

  1. Chop the vegetables into bite-sized pieces and place them in the soup maker.
  2. Add the curry paste, stock and water, and coconut milk to taste.
  3. Select the ‘Smooth’ programme.
