Crispy salad with mango sauce

 

 

 

 

 

 

1 mango, peeled and cut into cubes
1 pinch of chilli powder
250 ml fresh pineapple juice
1 tsp fresh ginger-race, finely chopped
1 tsp sesame oil
1/2 celeriac
1/2 cucumber
1 thick broccoli stalk
2 tbsp mixed seeds
1 handful of coriander, coarsely chopped

  1. Set aside a few cubes of mango for garnish.
  2. Put the remaining mango in the blender, together with the pineapple juice, chilli powder, ginger root and sesame oil, and mix it until smooth. Set this sauce aside.
  3. Cut the celeriac, cucumber and broccoli stalk into spirelli.
  4. Put the vegetable noodles in a bowl and pour a portion of the mango sauce on the noodles. Store the rest in the fridge.
  5. Cut the broccoli stalk into thin strings.
  6. Arrange the rocket on the plates, put the vegetable noodles on top and pour the sauce over the noodles as desired.
  7. Finish off with the seeds, the coriander and the cubes of mango.
