Carrot dip

Carrot dip

1 tbsp olive oil
1 small onion
1 or 2 garlic cloves
1/2 tsp salt
60 ml vegetable stock
350 g carrots
3 tbsp tahini
1 tbsp fresh lemon juice
1/2 tsp ground coriander
1/2 tsp ground cumin
2 cm fresh ginger
1/8 tsp cinnamon
some cayenne pepper
fresh coriander
sesame seads
  1. Steam the carrots until tender to the bite.
  2. Place all of the ingredients, except for the fresh coriander and sesame, in the Xpower Chopper and mix until smooth.
  3. Mix in the fresh coriander to taste.
  4. Serve in a bowl and top off with some sesame seads.

Tip: tastes delicious on a spelt or quinoa cracker.
