Ingredients
- 1 tbsp olive oil
- 1 small onion
- 1 or 2 garlic cloves
- 1/2 tsp salt
- 60 ml vegetable stock
- 350 g carrots
- 3 tbsp tahini
- 1 tbsp fresh lemon juice
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 2 cm fresh ginger
- 1/8 tsp cinnamon
- some cayenne pepper
- fresh coriander
- sesame seads
Preparation
- Steam the carrots until tender to the bite.
- Place all of the ingredients, except for the fresh coriander and sesame, in the Xpower Chopper and mix until smooth.
- Mix in the fresh coriander to taste.
- Serve in a bowl and top off with some sesame seads.
Tip: tastes delicious on a spelt or quinoa cracker.
